
What It Is
A tasty, high-protein breakfast (or snack) that combines eggs, zucchini, cheese (or a cheesy substitute), and seasonings β baked together to create a nutritious, low-carb dish.
Ingredients
- 1 whole egg
- 3 egg whites
- ~90β―g grated zucchini
- 1 tsp (or more, to taste) nutritional yeast (or a light cheese alternative)
- ΒΌ tsp onion powder
- Salt & pepper, to taste
(You can substitute with your preferred cheese β note: the nutrition will change)
Method
- Preheat your oven to ~200β―Β°C (β 400β―Β°F).
- Grease or spray a small baking dish or pan.
- In a bowl, whisk together the whole egg and egg whites until well combined.
- Stir in the nutritional yeast (or cheese substitute), onion powder, salt, and pepper.
- Fold in the grated zucchini until evenly distributed.
- Pour the mixture into the prepared baking dish.
- Bake for about 18 minutes or until the mixture is set (no longer wobbly in the center).
- Remove, let cool a little, then serve.
Tips & Notes
- You can add extra herbs (like chives or parsley) for flavour
- If using actual cheese (cheddar, mozzarella), sprinkle some on top before baking β watch bake time
- Great for meal prep: bake several servings and reheat
- Pair with a fresh salad or steamed greens for a complete meal
