Ingredients
- 1½ cups plain, unsweetened Greek yogurt
- 1 tablespoon honey
- 1 cup fresh raspberries
- ⅓ cup chopped pistachios
- 1–2 teaspoons hemp hearts
Instructions
- Prepare your tray
Line a rimmed baking sheet with parchment paper. This keeps the yogurt from freezing to the pan when you remove it later. - Mix the base
In a medium bowl, stir together the Greek yogurt and honey until well combined. - Spread it out
Evenly spread the yogurt mixture over the prepared baking sheet. - Add toppings
Sprinkle the fresh raspberries, chopped pistachios, and hemp hearts evenly over the yogurt layer. - Freeze
Place the tray in the freezer and let it freeze for about 3 hours, or until the yogurt is completely firm. - Serve & store
Once frozen, break the yogurt bark into pieces and enjoy. Store leftovers in an airtight container or freezer bag. It will keep well in the freezer for 2–3 weeks.
Tips & Variations
- Thickness matters: Spread the yogurt evenly—not too thin or too thick—for ideal texture.
- Mix up your toppings: Try granola, other berries, chocolate chips, nut butter, dried fruit, or seeds for variety.
- Flavour combos: If you’re up for more creativity, you can explore ideas like honey + chocolate cookie crumbs + strawberries and pistachios, or maple syrup + mixed berries + granola.
- Yogurt choice: Using Greek yogurt gives a creamier bark because of its lower water content
